FIRST COOKING EVENT
Today, Saturday, April 22, was the first time we gathered people together to cook up a few meals. We invited Cathy’s sister, Denise, and Kris, our neighbor. Kris’s daughter came down with a Spring time cold, so Jeff’s mom, Judy filled in. The menu for today was Spinach Lasagna Rollups and Honey Mustard & Bacon Smothered Chicken Breasts. The original plan was three entreés but we decided to take is slow for our first adventure and see how things went. The recipes are attached. For the lasagna rolls, it calls for them to include eggplant, we omitted the eggplant. Also, for timesavings sake, we just used jarred pasta sauce. That’s the joy of getting people together – we can edit the recipe however we see fit!
Also as a little gift for being the first to attend a Cooking Up Friends weekend, we made some citrus flavored sugar canisters to give away. The Lime sugar will be great for rimming your Margarita glasses as you sit back and enjoy them on a nice summer day. There are also Lemon and Orange flavored sugars. We found the article on making these great flavored sugars in Hallmark Magazine. Check out the recipe below!

Well, we’ll be sure to post more about our experiences and when the next CUF weekend will take place.
