Chilly Afternoon Chili

Now that the temperature is dropping and the leaves are ready to be raked, what better to do on a Saturday afternoon then fire up the stove and cook a large pot of chili! A bowl of chili while watching your football team win (or lose) hits the spot.

Here’s a great recipe that was passed onto us from a friend of my wife’s brother. The recipe is split into a few parts so I’ll make it easy to follow.

Step One:

Prep all the the following, cutting up all the ingredients

  • 1/2-1 lb hot sausage (or sweet sausage) - we usually use turkey sausage
  • 1 lb chicken breast, cubed
  • 1 lb sirloin tip, cubed
  • 1 large onion
  • 1 red pepper, chopped
  • 1/2 green pepper, chopped
  1. add a little oil to the pot, not too much
  2. add the sausage, brown first, then add chicken and sirloin
  3. add all veggies
  4. cook slowly for 30 minutes
  5. add can of tomato pure and simmer for 30 minutes or so

Step Two

Add in the following and simmer for 1-2 hours, the longer, the better.

  • 26 or 30oz can of great northern beans
  • 1 small can kidney beans
  • 2 tbs ground cumin
  • 1 tbs chili powder
  • cyan pepper to taste
  • Franks red hot sauce(or other hot sauce)

When you are ready to eat:
10 - 15 minutes before serving add fresh cilantro (3/4 bunch)
