Last night my wife and I were looking for a good meal since we had the night off from the kids. I had bought some sea bass, a fish that we hadn’t had in some time. It’s Cathy’s favorite.
I prepared the fish by sprinkling it with paprika and s/p and then roasting it in olive oil, white wine and garlic. It was a very good meal and took only about 30 minutes total time. Just made a bag of brown boil-in-the-bag rice as a side.
Roasted Sea Bass with Shallots and Green Beans
Preheat the oven to 400 degrees. Start pot of water boiling to steam beans. Sprinkle the sea bass with paprika and salt and pepper to taste. Pour the olive oil and white wine into a baking dish. Scatter the minced garlic over the bottom of the dish and top it with the fillets. Add the shallots to the dish over top of the fish.
Roast for 15 minutes, or so. While fish is roasting you can steam the beans to your desired taste. (I prefer them still a little crunchy).
So after the 15 minutes baste the fish and shallots with the pan juices and add the beans to the sides of the dish (if you want), next to each fillet. Keep basting shallots and fish until shallots are soft, about 5 minutes longer. Remove from the oven and serve immediately.
