
Almost every weekend my 3 1/2 year old son and I end up baking something in the kitchen. His favorite are cookies or brownies, but this weekend I got him to depart from his usual routine a little bit. I checked out the book Boost Your Child’s Immune System by Lucy Burney and in it are several kids recipes worthy of trying. The first thing my son and I made was the Banana Yogurt Cake. It is very easy to make and bakes in less than an hour. This would be great with strawberries and whip creme or some chocolate ice creme on top….anything that would satisy your sweettooth as the cake alone is not very sweet.
Preheat oven to 350°F. Combine the banana, yogurt, smart balance, egg and corn syrup in a food processor until smooth. Add the flour and baking powder and blend until mixed through. Scrape the mixture into a well-greased loaf pan.
Bake for 45 minutes to 1 hour until cooked through. Put on a wire rack to cool. Sprinkle with powdered sugar and desired topping before serving.
