Spicy Tuna Cakes

When we were young, I remember my mom making things we called tuna croquettes. My memory is fuzzy on whether we learned to make them in home-ec class at school or what, but they were very easy to make and tasted pretty good. In the hunt for something like these but with more grown up flavor, I found a recipe for Spicy Tuna Cakes. I modified it a bit to make it not so spicy. These are very easy to make and quite tasty!

Ingredients

  • 2(6ounce)cans tuna(drained)
  • 1 cup breadcrumbs
  • 1/3 cup egg beaters
  • 4 tablespoons light mayonaise
  • 2 tablespoons Dijon mustard
  • juice of one fresh lemon
  • 1/4 cup green onions (finely diced)
  • 1/4 cup bell peppers (finely diced)
  • 1 1/2 teaspoons cayenne pepper
  • 1/2 teaspoon red curry powder
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon fresh grated dried garlic
  • 1 teaspoon black pepper
  • Coat cakes in the following ingredients before frying

    • 1/2 cup cornmeal
    • 1/4 cup flour
    • 1 teaspoons salt/pepper mix

    Directions

    1) Mix all ingredients together in a bowl. Form into 6 hamburger shaped patties.

    2) Dip the patties into the cornmeal/flour mixture and fry in a skillet with a little oil until crunchy.
