Sly Fox Mediterranean Chicken

This is an inside look at how the chef’s at the Sly Fox Brewery in Phoenixville, PA makes their Mediterranean Chicken dish. This recipe is how to make an individual serving. I’m going to leave it as such.

Ingredients

Ingredients of the Cream Sauce

Pre-prep red pepper cream sauce:

  • Roasted red peppers
  • Half and Half ( or fat free half/half)
  • butter
  • garlic
  • salt & pepper
  • fresh basil (chopped small)

Method

  1. Heat olive oil in medium sized saute pan over medium high heat and add chicken.
  2. Cook chicken for about one minute per side then reduce hear to medium and continue to cook for another nine minutes, flipping occasionally.
  3. In the same sauce pan prepare red pepper cream sauce.
  4. Add roasted red peppers, half and half, butter, garlic, salt and pepper and fresh basil.
  5. Stir until the sauce begins to thicken slightly - about four minutes.
  6. Finally, add some sundried tomatoes, feta cheese, mushrooms and spinach.
  7. Stir all ingredients for the remaining three to four minutes and serve with your choice of vegetable or baked potato.
