Grilled Veggie and Cheese Sandwiches

Yum, perfect weekend quick-to-make sandwich and best of all you prepare in on your grill, so you never have to go back inside your house to cook!  Great for a party as you can grill up the veggies ahead of time and then just heat them up a bit when it’s time to eat; throw your cheese slices on top watch it melt and enjoy!

Grilled Veggie and Cheese Sandwiches

  • 2 large zucchini squash, cut lengthwise into 8 1/4″ slices
  • 4 slices of sweet onions cut 1/4″ thick (Vidalia work best)
  • 1 large yellow bell pepper, cut lengthwise into quaters
  • 6 T light or regular Caesar dressing, divided
  • 8 slices of fresh sourdough bread, or your preference
  • 6 (1 oz) slices of Muenster cheese (or your preferred cheese)
  1. Prepare grill and get hot. Brush both sides of vegetables with 1/4 cup of dressing. Place veggies on grill over medium heat (if you have a veggie tray or grill pan, use that). Grill covered for 5 minutes.
  2. Turn over and grill for 2 more minutes
  3. Brush both sides of bread with dressing. Place bread around vegetables; grill for 2 minutes or until bread is lightly toasted.
  4. Turn bread; top 4 pieces of bread with 4 slices of cheese.
  5. Tear remaining 2 cheese slices into small pieces; place on bread around the cheese.
  6. Grill veggies and bread 1-2 more minutes, or until cheese is melted, bread is toasted and vegetables are crisp-tender.
  7. Arrange vegetables over cheese side of bread; top with remaining bread.

Makes 4 servings and takes about 20 minutes to prep and cook.

Serve with fruit salad
