Fire Roasted Chile Relleños in a Jalapeño Beer Batter

Ok, getting these posted tonight for those you want to fire up your Fourth of July guests. These will be spicy and amazing appetizers. I also have another pepper recipe that I’ll be posting in the next few days! It is made with bacon so be on the look out!!

Suggested beer type: Victory Lager or Victory Festbier
12 lg Ripe Jalapenos (preferably red), roasted and peeled
Stuffing:
5 oz. Goat Cheese
pinch Chipotle Powder
1 T. Fresh Cilantro, chopped
pinch Salt
Cracked Black Pepper
Batter:
2 C. All Purpose Flour
1 t. Baking Powder
1 t. Salt
2 Eggs
1 C. Milk
1 C. Jalapeno
Beer
Flour, for dredging
2 C. Vegetable Oil for frying (350º -375F)
Directions
For the Peppers
Blend ingredients for stuffing.
Make a small slice down the side of the chile, remove the seeds and fill with goat cheese mixture.
Set aside in refrigerator.
For the Batter
blend dry ingredients first, then add in eggs, milk, and beer.
Roll the stuffed chiles in flour, then in batter.
Let excess batter drip off.
Fry in 350º-375º F oil until golden brown.
Remove from oil and place on a paper towel.
Serve with a good tomato sauce or your favorite Salsa and cheese sauce.
