Oh wow sounds great huh? I found this recipe online and decided to 'tweak' it a bit and sub out some of the butter and use goat cheese instead. Also, I've been using Smart Balance spread when sauteing It will give the risotto a little more tangy taste with the goat cheese, but it is a great accompaniment to the squash.

This is a reduced fat version (as we are always looking for ways to make our recipes great tasting without added fats, cholesterol and calories). We've merged two recipes and creating our own version, an Asparagus and Leek Risotto using the aspargus and leeks from each recipe.
This recipe looks pretty good and shouldn't be too difficult to make. And is GREAT for quick meals, make this recipe ahead of time and freeze in single portions. Ingredients: 1 Tbsp olive oil 1 chicken breast (boneless/skinless) 1 Tbsp Italian seasoned bread crumbs 1 tsp grated parm 1/4 cup marinara 1 small clove garlic, crushed 3 handfuls baby spinach leaves Salt & Pepper to taste Here's How To Make It: heat the oil in a non-stick skillet over medium heat. While oil is warming up, pound the chicken to 1/4 inch thickness, then sprinkle with bread crumbs, cheese, S&P, pressing so the crumbs stick to the chicken. Place them in the pan with garlic and saute for 2-3 mins per side. Top with hot marinara. Add spinach, turning frequently with tongs until it wilts (about 6 mins). As you can tell this makes one serving. Basically just double up the ingredients for another 2-3 breasts.
